All the portfolio/post and gallery items are ordered descending by the date of creation according to default WordPress settings.
In case you need to change their order, you may edit the date of publication.
Just click on Quick edit link under the item In Portfolio/Posts or Galleries section of the WordPress admin dashboard correspondingly and set there the day and time according to the item position you need to get as shown on the image below:
